Sake Pairing Class, March 23rd @ 6:00 PM

We will offer 12 sake and 12 small snacks in order to demonstrate principals for sake pairing. This isn’t a 100-level class: we will make assumptions about some basic sake knowledge in order to focus on what makes great sake pairing rather than going into detail answering “What is sake”.

We have 4 discussion areas: nigorizake, Ginjo-ka (Ginjo aromas and flavors), namazake, and dessert pairing. In each category we’ll be presenting 3 different sake and 3 different small snacks. We picked these areas to focus on because:

  1. Nigori sake is very popular - we see a lot of guests who come in and order nigori sake. Given its popularity we want to better pair it would food.

  2. Ginjo-ka - the aromas/flavors of Ginjo-shu offer great pairing opportunities but some daiginjos can get lost with food. We have been thinking about how best to pair in order to support the delicate flavors and aromatics without overwhelming them.

  3. Namazake - It’s nama season and we see a great interest in Namas from our guests. Namas bring their own unique challenges when it comes to pairing; they also offer fun opportunities for pairing.

  4. Desserts - while not a sake, desserts can be a challenge when pairing. We have ideas about how you can incorporate sake into this important part of your menu.

We’ll talk about the properties of the sake, the things to think about while pairing (good and bad), and then get you to try the sake with the snacks. We aim to help you understand “why” some things pair better than others. We’ll also attempt to answer questions that come up while you’re tasting.

Along the way we’ll provide some handouts with our notes to help you think about the pairings and support you as you continue your “sake-sploration” on your own.
